Ingredients:
For the Beef Stew:
2 lbs (900g) beef stew meat, cut into chunks
2 tbsp vegetable oil
1 onion, chopped
3 cloves garlic, minced
2 cups (300g) carrots, sliced
2 cups (300g) potatoes, cubed
1 cup (150g) mushrooms, sliced
1 cup (240ml) Guinness stout (or other dark beer)
2 cups (480ml) beef broth
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tbsp all-purpose flour
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
For the Cheddar Herb Dumplings:
1 1/2 cups (190g) all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup (115g) cold butter, cubed
1 cup (100g) shredded cheddar cheese
1/4 cup (60ml) milk
2 tbsp chopped fresh parsley (or 1 tbsp dried)
