Best Ever Beef Stew

Warm up with the ultimate comfort food: a hearty and flavorful Beef Stew that’s sure to become a family favorite. Tender beef, hearty vegetables, and rich broth simmer together to create a satisfying meal that’s perfect for chilly days.

Ingredients:

– 2 lbs stewing beef, cut into 1-inch cubes
– 1/4 cup all-purpose flour
– Salt and pepper to taste
– 2 tbsp vegetable oil
– 1 large onion, chopped
– 3 cloves garlic, minced
– 4 cups beef broth
– 1 cup red wine (optional)
– 2 tbsp tomato paste
– 1 tbsp Worcestershire sauce
– 1 tsp dried thyme
– 1 bay leaf
– 4 carrots, peeled and cut into chunks
– 4 potatoes, peeled and cut into chunks
– 2 celery stalks, sliced
– 1 cup frozen peas (optional)
– Chopped fresh parsley (for garnish, optional)

Directions:

1. In a large bowl, season the stewing beef with salt and pepper. Toss with flour until evenly coated.

2. In a large Dutch oven or heavy-bottomed pot, heat vegetable oil over medium-high heat. Add the beef in batches and brown on all sides. Remove browned beef and set aside.

3. In the same pot, add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.

4. Deglaze the pot with red wine (if using), scraping up any browned bits from the bottom.

5. Stir in beef broth, tomato paste, Worcestershire sauce, dried thyme, and bay leaf. Bring to a simmer.

6. Return the browned beef to the pot. Cover and simmer over low heat for 1.5 to 2 hours, or until the beef is tender.

7. Add carrots, potatoes, and celery to the pot. Cover and simmer for an additional 30-40 minutes, or until the vegetables are tender.

8. If using frozen peas, stir them into the stew during the last 5 minutes of cooking.

9. Remove the bay leaf and discard. Season with additional salt and pepper to taste.

10. Serve hot, garnished with chopped fresh parsley if desired.
