CABBAGE SOUP

CABBAGE SOUP is a PERFECT spicy vegetable soup with cabbage, tomatoes, carrots, celery and spices, ready in less than 45 minutes!

Cabbage soup is a spicy vegetable soup made from carrots, celery, onions, cabbage, diced tomatoes and spices. I’ve been making cabbage soup for years because it’s the perfect dish when it’s cold outside and you can make it in the slow cooker when you’re busy.

Many people make cabbage soup to lose weight because it is low in calories, but what I like best is that it is absolutely economical and very easy to prepare. I like to serve them with freshly baked bread or rolls, and sometimes I cut up leftover rotisserie chicken and throw that in too.

If I eat it for lunch, I serve it with crackers or breadsticks and a simple salad. You can also substitute vegetable broth for the chicken broth if serving to a vegetarian.

INGREDIENTS:

  • 3 tablespoons olive oil
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, chopped
  • 8 cups low-sodium chicken broth, vegetable broth, even fine
  • 1 teaspoon kosher salt
  • 1/ 2 teaspoon dried thyme
  • 1/ 2 teaspoon black pepper or after Flavor
  • 1/2 head cabbage, cut into 1.5-inch pieces
  • 4 carrots, peeled and chopped
  • 2 celery sprigs, thinly sliced ​​
  • 14.5 ounces stewed tomatoes

INSTRUCTIONS:

In a large pot Add the olive oil over medium heat, then add the onion and garlic and sauté until the onion becomes translucent, about 3-5 minutes.
Add salt, pepper, cabbage, carrots, celery and tomatoes to the broth and simmer for 30 minutes.
