Chicken Bacon Ranch Mac and Cheese

Ingredients:

  • For the Mac and Cheese:
    • 2 cups elbow macaroni
    • 2 cups shredded cheddar cheese
    • 1 cup shredded mozzarella cheese
    • 2 cups milk
    • 2 tbsp butter
    • 2 tbsp all-purpose flour
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • Salt and pepper, to taste
  • For the Chicken:
    • 2 cups cooked chicken, shredded or diced
    • 1 tbsp ranch seasoning mix
  • For the Bacon:
    • 6 strips of bacon, cooked until crispy and crumbled
  • Toppings (Optional):
    • 1/2 cup shredded cheddar cheese
    • Fresh parsley, chopped

 

 

 

Instructions:

  1. Cook the Macaroni:
    • Cook macaroni according to package instructions until al dente. Drain and set aside.
  2. Prepare the Cheese Sauce:
    • In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to form a roux.
    • Gradually whisk in milk and cook until the mixture thickens and starts to bubble.
    • Add garlic powder, onion powder, salt, and pepper. Stir until well combined.
    • Reduce heat to low and add shredded cheddar and mozzarella cheese. Stir until melted and smooth.
  3. Combine Ingredients:
    • Toss cooked macaroni in the cheese sauce until well coated.
    • Stir in shredded or diced chicken mixed with ranch seasoning.
    • Fold in crumbled bacon.
  4. Serve:
    • Transfer the mac and cheese to a serving dish. Top with additional shredded cheddar cheese and fresh parsley if desired.
  5. Optional Baking Step:
    • For a baked version, preheat oven to 375°F (190°C). Transfer mac and cheese to a baking dish, top with extra cheese, and bake for 15-20 minutes until bubbly and golden.
