  • For the Filet Mignon:
    • 4 filet mignon steaks (6-8 oz each)
    • Salt and pepper to taste
    • 2 tbsp olive oil
  • For the Mustard Cream Sauce:
    • 1 cup heavy cream
    • 1/4 cup Dijon mustard
    • 2 tbsp whole grain mustard
    • 1/4 cup beef broth
    • 1 tbsp unsalted butter
    • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
    • Salt and pepper to taste
  • For the Crispy Shallots:
    • 2 large shallots, thinly sliced
    • 1/2 cup all-purpose flour
    • 1/2 cup vegetable oil (for frying)
    • Salt to taste
