Loaded Bacon Baked Potato

 

Instructions:

  1. Bake the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Wash and dry the potatoes. Prick each potato with a fork a few times.
    • Rub each potato with a little olive oil and season with salt.
    • Place the potatoes directly on the oven rack or a baking sheet. Bake for 45-60 minutes, or until tender when pierced with a fork.
  2. Prepare the Toppings:
    • While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into small pieces.
    • Shred the cheddar cheese and chop the green onions.
  3. Assemble the Loaded Potatoes:
    • Once baked, remove the potatoes from the oven and let them cool slightly.
    • Slice each potato open lengthwise and fluff the inside with a fork.
    • Dot the inside of each potato with butter, then season with salt and pepper.
    • Top each potato with shredded cheddar cheese, crumbled bacon, and a dollop of sour cream.
    • Garnish with chopped green onions and any additional toppings if desired.
  4. Serve:
    • Serve the loaded potatoes immediately, while the cheese is still melted and gooey.
