Mini Beef Brisket Pies

Instructions:
Prepare Filling:
Brown beef in oil, then set aside.
Sauté onion and garlic, then add carrots and potatoes.
Return beef, stir in flour, then add beef broth, red wine (if using), tomato paste, Worcestershire, thyme, rosemary, and paprika. Simmer until beef is tender. Season with salt and pepper.
Make Pastry:
Mix flour and sugar. Cut in butter until crumbly. Add ice water to form dough. Chill for 30 minutes.
Assemble Pies:
Preheat oven to 375°F (190°C).
Roll out dough, cut into circles, and line mini pie tins. Fill with beef mixture and top with more dough. Seal edges and brush with beaten egg.
Bake:
Bake for 25-30 minutes until golden brown.

Cook Time: 2 hours
