Mini Bobotie Pies – A Flavorful South African Treat!

Ingredients:

  • For the Filling:
    • 1 lb (450g) ground beef or lamb
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tbsp curry powder
    • 1 tsp ground turmeric
    • 1/2 tsp ground cumin
    • 1/2 tsp ground coriander
    • 1/2 cup dried apricots, chopped
    • 1/4 cup almonds, chopped (optional)
    • 2 tbsp tomato paste
    • 1/2 cup beef or chicken broth
    • 2 tbsp white vinegar
    • 1 tbsp brown sugar
    • Salt and pepper, to taste
    • 1/4 cup fresh parsley, chopped
  • For the Topping:
    • 1/2 cup milk
    • 2 large eggs
    • 1/2 tsp ground turmeric
    • 1/4 tsp salt
  • For the Pastry:
    • 1 package (14.1 oz) refrigerated pie crusts (or homemade)

 

Instructions:

  1. Prepare the Filling:
    • Preheat oven to 375°F (190°C).
    • In a large skillet, cook ground beef or lamb over medium heat until browned. Drain excess fat.
    • Add onions and garlic, cooking until softened.
    • Stir in curry powder, turmeric, cumin, and coriander. Cook for 1 minute.
    • Mix in chopped apricots, almonds (if using), tomato paste, broth, vinegar, and brown sugar. Simmer for 10 minutes until the mixture thickens. Season with salt and pepper, then stir in fresh parsley.
  2. Prepare the Topping:
    • In a bowl, whisk together milk, eggs, turmeric, and salt. Set aside.
  3. Assemble the Pies:
    • Roll out pie crusts and cut into circles to fit into a mini muffin tin or tart pans.
    • Press dough circles into the muffin tin or tart pans, forming small cups.
    • Spoon the bobotie filling into each pastry cup.
    • Pour a small amount of the egg mixture over the filling in each pie.
  4. Bake:
    • Bake for 20-25 minutes or until the crust is golden and the topping is set.
  5. Serve:
    • Let the mini pies cool slightly before serving.
