POTATO PANCAKES

While there are plenty of Thanksgiving leftovers that will probably taste even better the next day (I’m looking at you, stuffing), mashed potatoes aren’t one of them (unless you plan on drowning them in gravy). However, these are some of the best leftovers to make something new with. Making and pan-frying potato balls is definitely the tastiest thing you can do with leftovers. Here’s how to make them.

Crispy pancakes are the best thing that can happen to leftover mashed potatoes.
If you find yourself swimming in leftover mashed potatoes after all your guests have left, these pancakes are for you.Add an egg, cheese and some chopped fresh chives and you have a mixture that you can form into meatballs. You don’t even need to add salt and pepper to the mixture if the original puree was well seasoned.

Flour the scallops and then place them in a hot pan greased with oil. The result is crispy, golden pancakes with a warm, fluffy interior. Serve them for lunch with a dollop of sour cream and a simple green salad on the side, or make them as a midday snack. You could even put a fried egg on top and call it brunch.You can hardly go wrong here.

INGREDIENTS

  • 2 cups leftover mashed potatoes
  • 1/4 S. flour
  • 1/4 S. milk
  • 1 beaten egg
  • 1 tbsp. Onion, chopped
  • 1 tbsp.ground green pepper
  • bacon fat or cooking oil
  • salt & Pepper to taste (optional)

PREPARATION METHOD:

Mix mashed potatoes, flour, milk, egg, onion and green pepper. Salt and pepper to taste. Form 3-inch round meatballs and fry them in a little bacon or cooking oil. Brown on both sides. Filter and serve.
