Spoon fritters

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and vanilla extract.
  3. Slowly pour the wet ingredients into the dry ingredients, stirring until a smooth batter forms.
  4. Heat about 2 inches of vegetable oil in a deep skillet or frying pan to around 350-375°F (175-190°C). Use a thermometer to monitor the temperature.
  1. Using a spoon, carefully drop dollops of the batter into the hot oil. You can make small or large spoon fritters, depending on your preference.
  2. Fry the fritters until they are golden brown, which should take about 2-3 minutes per side. Make sure not to overcrowd the pan, as it can lower the oil temperature.
  3. Remove the fritters from the oil using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
  1. For sweet spoon fritters, dust them with powdered sugar while they are still warm. For additional flavor, you can also add lemon zest, cinnamon, nutmeg, or grated apple to the batter.
  2. Serve the fritters hot and enjoy!
