Traditional South African Bobotie with a Flavorful Topping

Directions:
Preheat your oven to 350°F (175°C).
Heat vegetable oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in garlic and cook for an additional minute.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
Squeeze excess milk from the soaked bread and crumble the bread into the beef mixture. Add raisins, almonds, curry powder, turmeric, cinnamon, cumin, brown sugar, vinegar, and soy sauce. Mix well and season with salt and pepper.
Transfer the mixture to a greased baking dish and smooth the top.
In a bowl, whisk together the eggs and 1 cup milk. Pour this mixture over the beef mixture in the baking dish. Place the bay leaf on top.
Bake in the preheated oven for 45-50 minutes, or until the topping is set and golden brown.
Allow the bobotie to cool slightly before serving. Enjoy it with yellow rice and a side of chutney.
