Woolworths-Inspired Bobotie Recipe

Ingredients:

  • For the Bobotie:
    • 1 lb (450g) ground beef or lamb
    • 1 large onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tbsp curry powder
    • 1 tsp ground turmeric
    • 1 tsp ground cumin
    • 1/2 tsp ground coriander
    • 1/2 tsp ground cinnamon
    • 1/4 tsp ground allspice
    • 1/2 cup raisins or sultanas
    • 1/4 cup chopped dried apricots
    • 2 tbsp mango chutney
    • 2 tbsp soy sauce
    • 2 slices of white bread, crusts removed
    • 1/2 cup milk
    • 1 egg
    • 1 tbsp fresh lemon juice
    • Salt and pepper, to taste
    • 2 tbsp vegetable oil
  • For the Topping:
    • 1 cup milk
    • 1 egg
    • Bay leaves (for garnish)

Instructions:

  1. Prepare the Bobotie Filling:
    • Preheat oven to 375°F (190°C).
    • In a large skillet, heat vegetable oil over medium heat. Add onions and garlic, and cook until softened.
    • Add the ground beef or lamb and cook until browned. Drain excess fat.
    • Stir in curry powder, turmeric, cumin, coriander, cinnamon, and allspice. Cook for 1-2 minutes to release the spices’ aromas.
    • Add raisins, dried apricots, mango chutney, and soy sauce. Stir well.
    • In a small bowl, soak the bread slices in 1/2 cup milk, then squeeze out excess liquid and crumble the bread into the meat mixture.
    • Add the crumbled bread, 1 egg, and lemon juice to the meat mixture. Season with salt and pepper. Mix well and transfer to a baking dish.
  2. Prepare the Topping:
    • In a bowl, whisk together 1 cup milk and 1 egg. Pour this mixture over the meat in the baking dish.
    • Place a few bay leaves on top for garnish.
  3. Bake:
    • Bake in the preheated oven for 30-40 minutes, or until the topping is set and golden brown.
  4. Serve:
    • Allow the bobotie to rest for a few minutes before serving.
    • Serve with yellow rice, chutney, and a side salad or vegetables.
