Shepherd’s Pie Hand Pies

Ingredients:
Filling: 1 lb ground lamb/beef, 1 onion (chopped), 2 garlic cloves (minced), 1 cup carrots (diced), 1 cup peas, 2 tbsp tomato paste, 1 tbsp Worcestershire sauce, 1 cup broth, 2 tbsp flour, 1 tsp thyme, 1 tsp rosemary, salt, pepper.
Mashed Potatoes: 4 large potatoes (peeled/cubed), 1/4 cup milk, 2 tbsp butter, salt, pepper.
Pastry: 1 package refrigerated pie crusts, 1 egg (beaten).
Directions:
Filling: Cook meat, onion, garlic. Add carrots, peas, tomato paste. Stir in flour, broth, Worcestershire sauce, thyme, rosemary. Simmer until thickened. Cool.
Mashed Potatoes: Boil potatoes, mash with milk and butter. Season.
Assemble: Cut pie crusts into circles. Fill with meat and mashed potatoes. Seal with fork, brush with egg.
Bake: 375°F (190°C) for 20-25 minutes until golden.
