Shepherd’s Pie Hand Pies

Instructions:
Prepare the Filling:
In a large skillet, cook the ground meat over medium heat until browned. Drain excess fat.
Add onion, carrot, celery, and garlic. Cook until vegetables are tender, about 5-7 minutes.
Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
Add broth and peas. Simmer until the mixture thickens and most of the liquid has evaporated, about 5 minutes. Remove from heat and let cool slightly.
Prepare the Mashed Potato Topping:
Stir shredded cheddar cheese into the mashed potatoes if using.
Assemble the Hand Pies:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out the pie dough on a lightly floured surface. Cut into 4-6 inch circles or squares.
Spoon a small amount of meat filling onto the center of each dough piece. Top with a dollop of mashed potatoes.
Fold the dough over to cover the filling and press edges together to seal. Crimp edges with a fork if desired.
Brush the tops with beaten egg.
Bake:
Place hand pies on the prepared baking sheet.
Bake for 20-25 minutes, or until the dough is golden brown.
Serve:
Allow the hand pies to cool slightly before serving.
