Ingredients:
- For the Bobotie:
- 1 lb (450g) ground beef or lamb
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/2 cup raisins or sultanas
- 1/4 cup chopped dried apricots
- 2 tbsp mango chutney
- 2 tbsp soy sauce
- 2 slices of white bread, crusts removed
- 1/2 cup milk
- 1 egg
- 1 tbsp fresh lemon juice
- Salt and pepper, to taste
- 2 tbsp vegetable oil
- For the Topping:
- 1 cup milk
- 1 egg
- Bay leaves (for garnish)
Instructions:
- Prepare the Bobotie Filling:
- Preheat oven to 375°F (190°C).
- In a large skillet, heat vegetable oil over medium heat. Add onions and garlic, and cook until softened.
- Add the ground beef or lamb and cook until browned. Drain excess fat.
- Stir in curry powder, turmeric, cumin, coriander, cinnamon, and allspice. Cook for 1-2 minutes to release the spices’ aromas.
- Add raisins, dried apricots, mango chutney, and soy sauce. Stir well.
- In a small bowl, soak the bread slices in 1/2 cup milk, then squeeze out excess liquid and crumble the bread into the meat mixture.
- Add the crumbled bread, 1 egg, and lemon juice to the meat mixture. Season with salt and pepper. Mix well and transfer to a baking dish.
- Prepare the Topping:
- In a bowl, whisk together 1 cup milk and 1 egg. Pour this mixture over the meat in the baking dish.
- Place a few bay leaves on top for garnish.
- Bake:
- Bake in the preheated oven for 30-40 minutes, or until the topping is set and golden brown.
- Serve:
- Allow the bobotie to rest for a few minutes before serving.
- Serve with yellow rice, chutney, and a side salad or vegetables.
